Ms. Villain walked away with the victory via a concoction dubbed Sweet Heat Meat.

She now has a 6 month contract vending food at the Zorro Food Truck parked at East Austin&apos;s Scoot Inn.

Years back, I did a lengthy series on the food carts of unincorporated Travis County. I&apos;d been on some long bike runs down fm 812 and fm 973 and noted that there was a mysterious abundance of taco trucks littering the side of the highways.

It&apos;s unbelievable how much work goes into throwing a pop up restaurant.

To source the finest groceries in Austin, there is no one-stop market where you can lay your hands on everything at one time.

I&apos;ve got 3 kettles rolling right now. A smoked turkey wing stock for the wilted greens, a chicken stock for the chicken gravy and a pork stock for the hoppin john/black eyed peas. If you want your food to be the best you have to make your stock from scratch. Period.

We knocked out fifteen pounds of pork belly, roasted hatch chile sausage last night. It was batch number 7 of our Central Texas Hot Guts project and it&apos;s dynamite. We dropped over fifty pounds of chicken and pork ribs in an icy brine yesterday. There are naysayers to the brining method but we&apos;ve always utilized the technique to good effect.

Tomorrow night will be an all-nighter as we cook the greens, bake the cornbread, make the banana pudding and simmer the black eyes all night long. Sunday morning it&apos;ll be fire up the smoker to roast the meats-time. Hopefully the timing will be right and we&apos;ll wrestle the kettle of grits off the range right as we go to service.

Pictured is the team that made the first Scrumptious Chef Pop Up such a success. Robyn&apos;s an Austin restaurant veteran who just started her career in graphic design. Harrington worked in the best kitchens in New Orleans, Paris, New York, Vermont and San Francisco before finally attaining a 3rd Michelin star at Meadowood, one of the greatest kitchens in the USA.

The party could not happen without their labor.

I spent the last week poring over my Edna Lewis and Sylvia Wood&apos;s cookbooks to make sure the Adrian Miller {soul food scholar} menu would be honored properly.

                September 22nd 2012 is a long ways off. That&apos;s when Saigon Street announced they will re-open for business. But after seeing numerous other food trailers &quot;go on hiatus&quot; we&apos;ve noticed one common factor: they never manage to re-open.

It&apos;s a tough game to begin with. Competition is fierce with well over a thousand trucks vying for your dollar. Weather holds you hostage on a daily basis, the food trucks are cramped and you&apos;re relying on the notoriously fickle public to earn your living. It&apos;s tough.

We&apos;ve enjoyed our meals at Saigon Street. The folks running the joint are friendly and the banh mi are good. It seems like they chose a good location as there are few other food trailers in their zone to compete with.

Summer comes to a grinding halt the third week of September this year. We&apos;ll head up to Airport Blvd and report back on whether Saigon Street managed to re-open or not.

                Buche is pig stomach. If that sounds appealing to you then continue reading. If you&apos;re a less aggressive eater of offal and &quot;the nasty bits&quot; then turn the page to something less earthy. Buche is not a particularly common ingredient at taco stands in Austin. 

When you do find it you often have to coax the taquera into selling you one {if you&apos;re a gabacho}as they generally figure you&apos;re not going to like it and they want your repeat visits-not easy to pull off if they sell you a taco that&apos;s not to your liking.

This is a loss on par with the closure of Odd Duck Farm To Trailer and hits with the same magnitude as when Arancini shuttered down in Bouldin Creek.

It&apos;s unfathomable that such a delicious, beast of a food trailer could close in a town as hungry for good food as Austin, Texas. Unfathomable.

                I like the gimmick. Fill up a couple fryolators {hopefully with leaf lard} then wrap all sorts of things in bacon and submerge everything you can get your hands on in boiling oil. Lard Have Mercy cooks deep fried Oreos, Twinkies, Pickle chips, Chili Balls and banana flavored corn dogs among other items.

Prudery is not the forte of the folks behind this business.

We received some stunning news yesterday. 

We&apos;d planned on using the ancient brick pit at Three Little Pigs to smoke the briskets for the party on Sunday, but we got a better offer. 

Back when Home Grown Catering had the touring contracts with ZZ Top and Willie Nelson, they had to be able to cook large amounts of brisket, sausage and ribs for the hungry musicians. They carted along a giant mobile pit so they could cook Texas-style barbecue for Willie, Billy Gibbons and the rest of the crew{s}.

                How did this escape our scrutiny?

Smithsonian, the magazine, website, art museum and now-documenter of food trucks, hailed Paul Qui&apos;s East Side King as one of USA&apos;s twenty best way back in February of this year.

We&apos;re a mite late but it still bears mentioning.

The long form piece is authored by 2 {!} writers and at 3+ paragraphs it&apos;s easy to see why. Neither Megan Gambino nor Aviva Shen could have carried such a heavy load. Best to divide the responsibilities so neither scribe would get knuckled under by the effort. 

Of course they pass most of the heavy lifting off to a writer for Serious Eats who gushes quite profoundly about the beet fries {creamy....soft!}.

                Rifling through the backfiles tonight. El Guero is a taco school bus on Cameron Road near Nomad Bar. They specialize in tortas estillo distrito federal. In other words: sandwiches done in the style of the taqueras in Mexico City.

An interesting aside is that this bus will also add some chopped up hot dogs as garnishes on anything on the menu. No, this is not the much celebrated &quot;Sonoran hot dog&quot; that&apos;s gotten so much acclaim in the past year. These hot dogs are just the good old fashioned, non-descript wieners that you grew up eating at swimming pools and baseball parks.

We&apos;ve never had our minds blown by the food at this truck, but the taquero is as nice as he can be, he&apos;s open late at night and you&apos;re eating from a public school bus rigged out with flat tops and fryolators. We take our pleasures where we find them.

                Right as SXSW was grinding to a halt, one moment before the wheels would&apos;ve come off and Austin would&apos;ve imploded into a cloud of Texas-shaped stardust, we wandered by Raymond Tatum&apos;s Three Little Pigs food trailer and lo and behold; he was open.

It being a Sunday this made for a very happy and surprised group of eaters [he&apos;s normally closed on the Lord&apos;s Day].

Despite SXSW having officially ended the evening before the streets of East Austin were teeming with people and we were quickly joined by 20 or so other happy eaters, all celebrating this stroke of good fortune.

Then it got weird.

                We&apos;ve been rolling into Jax, the little neighborhood bar at the corner of 29th and Rio Grande, regularly for the past week to see if Art Blondin of Artz Rib House has gotten his newest iteration of his old barbecue operation up and running yet.

We figured that the little pink food trailer in the parking lot was his but we were wrong.

The staff, bless their heart, have no idea who the owner operator of the pink food trailer is but they reckon it&apos;s a bbq outfit with a theme of North Carolina style smoked meat.

One patron said he thought the name of the new business was 3 Little Pigs which will come as a surprise to Austin icon Raymond Tatum who already has a 3 Little Pigs food trailer running on the East Side.

We&apos;ll report back with more info as warranted.

Back in the 90s you had one option: Loncheras serving Mexican food, primarily to working class Mexican cats and in the know regular folks who dug deep for their daily chow.

A recent visit to Three Little Pigs found subtle improvements across the board as we ran roughshod over the menu. 

A porchetta was luscious and rich, tasting of local hog. The classic pork belly slider had our crew buzzing and reminiscing about the good old days of Odd Duck, while Chef Tatum&apos;s homage to the Deep South; collards, grits and meatloaf stole honors as dish of the night.

                Returning from another Once Over Coffee Bar run I noticed Tacos Don Gabriel in the quick mart parking lot next to Fulmore Middle School on South Congress.

Nobody home.

Walked inside the gas station to see if anybody had at least an anecdotal review of the food but, inspite of the gal working the register being a big beefy hoss cat who looked like she&apos;d definitely know her way around a taco, I rolled snake eyes.

We haven&apos;t been able to dig up a menu online but they&apos;re all over Twitter posting their daily menu and specials.

Everything they&apos;re tweeting sounds delicious and apparently if you pull up on a motorcycle and start taking pictures you&apos;re invited to join a secret society of free soup eaters [the nice lady in the cart hollered at me to see if I wanted a free sample but I had to beg off].

I believe that was the sound that came out of my mouth and made its way past the barbacoa taco that was halfway inside it, as I was sitting on a tiny folding chair outside El Taco Rico. That&apos;s how damn fine the tacos at El Taco Rico are--they&apos;re audible grunt worthy.

I found El Taco Rico through this blog and their staff&apos;s extremely high praise of the street grub it turns out of its tiny East Austin trailer. Honestly, I don&apos;t think I would have found it otherwise. It&apos;s located in the parking lot of a worn-in washateria, in the middle of an extremely unassuming neighborhood, off a part of East Riverside that specializes in providing smokes and gas on the way to the airport and little else.

                Rolling through the east side of Austin on the way to pick up some barbecue from Sam&apos;s, Tariq&apos;s Barbecue food trailer is spotted parked alongside San Saba st. between 8th and 9th.

It&apos;s quite mysterious. The area is pure residential with no other business within a couple blocks. A ferocious dog goes completely bonkers from a nearby yard and there is no one to offer a query to.

It&apos;s a good looking little cart, nice and homely and rustic. Lord knows it might be some good barbecue too.

                Ran by Arlo&apos;s food trailer earlier this week to check out the menu, maybe eat a side dish or two and see what all the fuss is about. In spite of Austin&apos;s starving, burgeoning vegetarian community our food trailer scene recently lost Iggi&apos;s which catered to the herbivore community.

Arlo&apos;s was closed at lunch time.

We walked around for a bit taking pictures watching people stroll up, realize the trailer is  closed, then leave. One group decided to utilize Arlo&apos;s patio to have an impromptu picnic with foods they requisitioned from their auto.

Arlo&apos;s is located on Onion Street just south of Takoba in spite of their 6th st. official address

                A very ambitious menu from Taqueria La Caprichosa. Buche, desebrada, barbacoa, carnitas, pierna, tinga, oreja, bistec, pastor, guisada.

If you love meat on your tacos this might be your spot.

Unfortunately when we visited we&apos;d just eaten three trays of food from Paul Qui&apos;s East Side King and did not have room for a single taco. Not even the buche which is one of our very favorites.

We&apos;re always out on the town prowling around looking for new taco sources so we&apos;ll run back by there soon and score a brace so we can report back.

Hoover Alexander&apos;s Soular Food Garden is an earnest endeavor from a legend in the Austin food scene. We hope it proves to be a huge success but two recent visits were problematic.

Not one food trailer was open in the middle of the day. It&apos;s hard to line coffers with green backs when the tills are on lockdown, the flat tops are cold and the shutters are closed.

                Details are still coming in but Odd Duck Farm To Trailer is reportedly closing their doors in December of 2011.

We&apos;ll dig deeper on this story as events warrant but Austin will be a lesser city without this ground breaking restaurant on wheels.

It&apos;s certainly true that Fun Fun has hosted countless other significant bands over the years and we&apos;ve seen many of them but this is the show we&apos;ll reflect over when we inevitably slip into our dotage. Austin Texas is set to host the now huge music festival at Auditorium Shores this weekend November 4,5 and 6th and rock fans who are also eating fans will be served, sometimes well and sometimes poorly, at the event.                 Hoover Alexander&apos;s bona fides are fully in order. He trained under Austin icon Harry Akin at the Nighthawk back when that really meant something in this old town. This was early 70s Austin not too long after Akin had proven instrumental in putting an end to the Jim Crow laws that had plagued the South and Texas.

After nearly a decade with The Nighthawk, Alexander embarked on a journeyman style career in Austin food, working for a handful of organizations most notably Chez Fred, the predecessor to what would later become Chez Zee.

We have no idea what that means but we had much love for Ms. Parker in her star turn in the old tv series Square Pegs.

If attendance is the sole metric of success then the first edition of the Picnic was a marvel with twenty thousand attendees by some estimates. 

Unfortunately, the crowd that showed up found a poorly planned, poorly executed festival with little to offer other than long lines, disgusted patrons and a general mood of ill will towards the event.

Austin, Texas leads the nation in a lot of important categories. We&apos;re easily the biggest haven for bad tattoos in North America. If you need proof roll into Lovejoys on a Friday night and sit at the bar for an hour or two.

We spotted the newest tattoo trend on several girls on a recent visit. Cursive passages scrolled onto various body parts from the works of authors whom these young ladies had, at best, passing familiarity with.

                We love vegan food. When we&apos;re planning meals at the house or shopping at Fiesta for groceries we always figure a vegan side dish or two to go with our brisket, pork loin, wild boar hog or country style gator ribs.

A balanced plate is what we seek.

But the thought of sitting down to eat only side dishes and then calling it a meal? Unthinkable. We are saddened however by the loss of one of Austin&apos;s few vegan restaurants. Iggi&apos;s Texatarian has announced that they are shuttering. This is to be their final week of business.

Anyplace that has vegan buffalo on their menu will always have a bit of allure to us. Almost, but not quite cancelled out by their use of the word &quot;sammich&quot; or &quot;sammie&quot;.

While we always enjoy reflecting back on our vocabulary circa age 3, we quit using these words a good while ago.

We imagine Iggi&apos;s food cart won&apos;t be vacant for long. The mobile food business is still totally heated up here in Austin with zero signs of abating.

                The old sway backed nag that is the Chow website can still put out an interesting article once in a blue moon.

In a piece titled &quot;Food Truck Frenzy Leaves Loncheras In The Dust&quot; Gustavo Arrelano, syndicated writer of the &quot;Ask A Mexican&quot; newspaper column, posits that Mexican taco cart owners are being left out of the frenzy of media accorded their hip new peers in the mobile food culture that&apos;s currently gripping the United States. &quot;If you only saw these shows like Eat Street or most of the coverage on the Food Network, you&apos;d think this is a brand-new phenomenon that has never existed before in the United States,&quot;

Speaking at a food cart festival in Oakland that drew thousands of people in two and a half days,  Mr. Arellano said the following: &quot;Let us now praise famous loncheras.&quot;

His point being that perhaps an old school lonchera could be invited to a huge, food cart festival.

In a piece in Westword, a Denver alt-weekly, Arellano continues on the topic.

&quot;Gourmet trucks are hip and all the rage, but all of you are idiots. You&apos;re not doing anything new, you&apos;re not celebrating anything new, you&apos;re just riding the coattails of people who went to court and fought for this.&quot;

Let&apos;s view his hypothesis through the lens of Austin Texas.

Last fall, C3, an Austin-based entertainment company, threw a big food cart party called the Gypsy Picnic on the banks of Lady Bird Lake with thirty local carts providing the chow.

Not one lonchera amongst them.

Hundreds of lonchera carts in Austin have been running for decades prior to the current trend of gourmet food trucks and not one was invited to the celebration of the mobile food culture.

But let&apos;s examine Arellano&apos;s argument more closely.

Since Yelp is a highly regimented food forum where each review is strictly filed under the  respective restaurant which it applies to, we&apos;ll use the site as a base metric.

Let&apos;s look at two food carts:

The modern, chef driven cart utilizing farm to market ingredients [which Arellano calls &quot;luxe lonchera] vs the old school lonchera cart putting out tacos for a primarily Latino crowd.

Chef Bryce Gilmore [regarded as one of Austin&apos;s best chefs] opened up his Odd Duck Farm To Trailer  cart in December of 2009. Since that opening his cart has been reviewed 316 times.

Chef Yolanda Sanchez Cornejo [regarded as one of Austin&apos;s best taqueras]  opened up her cart El Taco Rico early in 2007. Since that opening her business has been reviewed 4 times.

That&apos;s pretty stark and it definitely gives me pause.

I&apos;d never thought about Arellano&apos;s theory til I read the Chow article.

I got turned onto loncheras back in the 1990&apos;s and have had a thing for food carts ever since.

The reason being that they are often open extremely early and extremely late, they are cheap, they typically make their food from scratch and I like to sit outside when I eat.

I praised the heavens when the lonchera scene started to diversify. All of a sudden I could get a lamb hot dog covered with feta cheese and tzatziki sauce, a plate of Yom Nua or a basket of Korean fried chicken.

I never slowed down to think about the effect the rampant popularity of the new carts with their Twitter accounts and sous vide cooking techniques could have on the old fashioned loncheras.

I was too busy eating and loving the food at places like East Side King, Arancini and Three Little Pigs.

Delicious but a far cry from the lonchera-based carne guisada tacos I&apos;d eaten and loved for years.

But Arellano has made me think about the forebears of this movement. Some of these people got their asses beaten for their trailblazing work. They were threatened, robbed at pistol point and had laws passed to limit their ability to do business.

Hell, we&apos;re still combating these problems in the Austin of 2011, can you imagine how tough it was 20 years ago?

Speaking further on the difference between the new gastro-carts and the old taco wagons Arellano continues...&quot;they&apos;re really no different -- except the luxe-loncheras will charge you four bucks for the same tacos the regular loncheras gives you for two.&quot;

Now we&apos;re starting to see the bleed over from that unhappy circumstance. The loncheras are visiting their rivals and beginning to emulate them. Our former $1.50 tacos are heading towards $4 and our beloved homemade tortillas are beginning to be replaced by factory issue ones.

This is the Torchy&apos;s effect, as these are the business practices of the immensely popular Austin based taco chain.

I&apos;ve read Arellano&apos;s column Ask A Mexican for years. It is hilarious. He&apos;s clearly a well informed writer raising some interesting points about the current food truck trend.

                Tony Yamanaka, the marketing coordinator for Austin&apos;s Better Business Bureau has founded a non-profit to advance the Austin food cart scene.

The Food Trailer Alliance is a coalition of food truck owners and operators teaming up so they may share knowledge and resources in their field of expertise. The first thing that occurs to me is that a group of like minded owners all working in the same field could do some group buying at incredibly discounted rates.

100 briskets versus 5 or 1000 pounds of potatoes versus 50. 

Sharing critical data on such important facets of the business as lunchtime operating versus evening operating or discussing food cart saturation of certain neighborhoods versus other areas of Austin that are woefully underserved.

The variables are endless.

Worrisome issues may also present themselves.

Imagine corporate honcho Tom Ramsey of the Snappy Snacks empire dolling himself up in full drag to infiltrate a meeting.

His attempts to squelch the competition have been well documented [comments below]

Of course he got his payback [comments below]

                I tried Spartan Pizza once when they were in the parking lot of the old Beverly&apos;s [ Red Shed ] down on deep south Congress Avenue.

Unfortunately the band was so bad [The Leftys] that I&apos;d drunk myself into a torpor so I can&apos;t recall how good or bad the pizza was. Which brings us to Mick Vann. One of the few local food scribes whom I unfailingly trust.

If this guy says it&apos;s good, it&apos;s good. He gave Spartan a rave review and included them on his list of best 10 food carts in Austin Texas.

                Love it, hate it or be deeply ambiguous about it, our daily newspaper, the Austin American Statesman still swings some weight in this old town. While the Austin Chronicle might drive 3 or 4 people to your business with a favorable review, the Statesman can send dozens.

Dozens. Which can be a game changer for a small food operation like Three Little Pigs, the nose to tail food cart from local-legend Raymond Tatum.

I&apos;ve been eating there since the day he opened in the back parking lot of East End Wines at the confluence of E. 11th St and Rosewood Avenue. 

The comparisons to the more famous Odd Duck are obvious. A talented chef, working primarily with pig and locally sourced ingredients, cooking at a high level at prices that beggar the imagination.

Everything is $4-7, it is delicious and it is cooked to order while you wait.

I love East Side King but it&apos;s easy to sort of scratch at their menu and spend 30 bucks whereas you can totally run the table at Chef Tatum&apos;s cart for the same price.

Mike Sutter&apos;s piece in the daily actually has some merit it to it. Raymond&apos;s pig skin graft is duly noted and mention is made of how worthless the Small Business Administration has become. Of particular interest is the cost breakdown of how much dough you&apos;ll need if you want to follow in Tatum&apos;s footsteps and open your own cart. 

It ain&apos;t cheap.

The trials of becoming a small business owner are notated and the story gains traction as the author and chef visit Richardson Farms, a pork operation in Rockdale Texas.

Three Little Pigs is one of my top 5 carts in Austin. A little main stream media attention might be just what it takes for it to become wildly successful like Odd Duck or East Side King.

                Starving and ready to branch out from my normal delicious meal I have at La Reyna I venture a bit deeper into Bouldin Creek to try out the new food trailer court catty corner to Once Over Coffee Bar.

Every cart is closed although signs of life are here. I can hear people rummaging about inside Grill Haven and am tempted to roust the cook and see if I can get some chow but decide against it.

I dug up the operating hours

South

TU –TH: 9am – 6pm

F: 9am – 8pm

SA: 9am – 9pm

SU: 9am – 3pm

These are probably a rough guide to when they&apos;re open as they definitely weren&apos;t operating when I visited.

I think they serve sandwiches, wraps and tacos. I&apos;d love to hear from someone who&apos;s tried this trailer.

Hopefully the vendors were recuperating from a weekend of heavy sales and they were all at the chiropractor offices getting their backs worked on from lugging giant duffel bags of cash out of their carts at the end of the weekend.

I&apos;ve got a high bar due to growing up a stones throw from a garden where green tomatoes were easy picking and one of the ol country gals in my family regularly filled cast iron with lard and went to frying.

                If one restaurant in Austin has reached fever pitch status it is this humble little food cart on the I-35 frontage road at Concordia Avenue in East Austin.

I&apos;ve never seen this level of excitement for any style of restaurant in town.

Yes, we Austinites love our barbecue but the rabid fan base that Aaron Franklin has built in a year or so is absolutely phenomenal.

Enjoy it while you can as he&apos;s shuttering this location and moving into the old Ben&apos;s Longbranch building on e. 11th st in the next few weeks.

                Over on Manor Road near Magic Taco Box sits one of the new entrants in Austin&apos;s burgeoning food cart scene: Tenderland.

Rumor has it that a couple Iowa transplants have brought one of their state&apos;s signature dishes to Texas.

A breaded and fried pork tenderloin sandwich.

It&apos;ll be interesting to see how it plays out deep in brisket country.

I&apos;ve been by a few times to sample their goods but my timing is off as they&apos;ve never been open.

I posit that it&apos;s the best Mexican restaurant in town. Period. 

Yes, the dining is 100% al fresco, with 4 chairs under the overhang of a laundry mat but that matters little to me as I let flavor be the guide.
