Finally some good news to report from the world of barbecue.
Daniel DeLaney, burgeoning pit boss of Brisketlab and now BrisketTown, made the paper of record this morning. One of our all time favorite writers Alex Witchel got caught up with DeLaney as he prepares to open a brick n mortar bbq joint in Brooklyn.
DeLaney approaches the craft with reverence and respect. And he's got Aaron Franklin's smoker to back him up.
But, as the article winds to a close DeLaney is quoted as saying "I want to make the best barbecue in the country."
We like the pluck, the moxie and the wherewithal DeLaney has displayed during his run-up in the world of barbecue, and we have no doubt the man is putting out some good brisket, but there's a passel of leathery old Texas pit bosses that ARE putting out the best barbecue in the country.
And that ain't ever going to change.
