Picked up a bag of buckwheat groats for supper tonight.
I smoked some Nunu's [Youngsville, Louisiana] alligator/crawfish sausage and am rummaging around in my recipe archive that I keep in my head for a plan of attack.
Since buckwheat groats are gluten free I'll be keeping with current trends and having a wheat free meal.
First time I've done that in a coon's age. Etymology is in the comments.

They're kosher so that base is covered.
Vegans have nothing to fear.
I reckon you can cook them alot like folks in the Deep South cook grits so I should be alright having cooked a few hundred gallons of grits in my life.
