How To Make Austin Texas-Style Breakfast Tacos
We live in the best food city in the United States but we’d go hungry if we had to subsist on New Orleans breakfast tacos. They range from mediocre to actively awful.
Chop a strip of bacon
Chop a jalapeno
Put them in a hot skillet
Let them cook for 5 minutes
Add an egg whipped with a dollop of cream
When the egg is nearly cooked add a half-handful of shredded cheese
Stuff a hot tortilla with the egg, bacon, jalapeno, cheese mix
Garnish with hot sauce
Eat.
Cooking notes
You can substitute mushrooms, ham, chorizo, link sausage of any other vegetable or protein for the bacon
We love flour or corn tortillas, either one will make a great taco
We keep a few different salsas in the fridge to make the morning breakfast go easy…you should too
