We live in the best food city in the United States but we’d go hungry if we had to subsist on New Orleans breakfast tacos. They range from mediocre to actively awful.

That’s fine. If we tried to find good gumbo or red beans and rice in Austin we’d flat starve to death. The classic Louisiana dishes that we love and eat regularly here in New Orleans are available in Central Texas – you just wouldn’t want to eat them.

Breakfast at the Scrumptious House means one thing: Carefully cooked tacos prepared from scratch in the style of the ones you can routinely find all over Austin. Only ours are better.

How To Make Austin Texas-Style Breakfast Tacos

I’ve fed dozens of Texans my breakfast tacos over the years and they all said the same thing: “Those are the best I’ve ever had.”

What’s the secret? Heavy cream.

You’re not going to find any taqueria in Travis County, Texas adding cream to their eggs. If they did they’d have to charge a king’s ransom for their tacos and people would go to the next source down the block so they could save a buck.

How To Make Austin Texas-Style Breakfast Tacos

One of our standard tacos is simple: bacon, jalapeno, egg, cheese, tortilla and dragon’s blood hot sauce.

Method

  • Chop a strip of bacon
  • Chop a jalapeno
  • Put them in a hot skillet
  • Let them cook for 5 minutes
  • Add an egg whipped with a dollop of cream
  • When the egg is nearly cooked add a half-handful of shredded cheese
  • Stuff a hot tortilla with the egg, bacon, jalapeno, cheese mix
  • Garnish with hot sauce
  • Eat.

    Cooking notes

  • You can substitute mushrooms, ham, chorizo, link sausage of any other vegetable or protein for the bacon
  • We love flour or corn tortillas, either one will make a great taco
  • We keep a few different salsas in the fridge to make the morning breakfast go easy…you should too
