For nearly a decade we made an annual trek to Gonzales, Louisiana for the big World Jambalaya Championships held in the spring each year til it slowly dawned on us that we were eating jambalaya that was inferior to what the Scrumptious team were putting out in our humble 9th Ward kitchen.

Free-styling is essential in the kitchen as you may not have what appears to be a crucial ingredient. Just wing it and substitute something else if that’s the case. The one thing you can’t riff on is homemade stock. Without it your jambalaya will be a naked fraud.
