Boudin fixins out in Lafourche Parish Louisiana

Wallace Johnson, the man responsible for the modern day boudin industry in Louisiana, and his crew at Johnson’s Boucaniere fared well last month at the big boudin shootout in Lafayette. The charcutieres at Mr Johnson’s old Cajun meat house took home two championships as well as a second place finish.

And we always love to see Jim Moreau aka T-Jim do well at these events. Mr Moreau got started in Cottonport when he was a young man and he’s still going strong 50+ years later.
