Kirk Frady Of Frady’s One Stop

Ethyl and Dorothy, two long-time cooks at Joe Frady’s 9th Ward corner store, have long since passed but their red beans and rice recipe is still in weekly use at the legendary po boy diner.

Back in the 70s when Joe Frady took over the old Flick’s Meat Market he needed help to get the diner part of the business running. Two elderly 9th Ward cooks were soon located and Ethyl and Dorothy quickly helped cement Joe’s reputation as giving the working man a good, home-cooked meal at a fair price.

Red beans and rice were a staple 40+ years ago at Frady’s and they’re still one of the most popular items on the menu.

Today, March 16th 2017 at 5pm Frady’s is set to butt heads with the Cheezy Cajun, another 9th Ward restaurant in the city-wide Red Beans and Rice cooking competition that is taking place all across New Orleans.

The proving grounds will be Shank Charcuterie, Kriss Doll’s butcher-shop cafe located at 2352 St Claude Ave, New Orleans, LA 70117.

We ran over to Frady’s this morning and owner Kirk (Joe’s son) was hard at work in the tiny kitchen, slaving over a big kettle of red beans while he also stayed busy hustling out short order breakfasts and fried baloney po boys.

Kirk will be busy tonight (he’s taking knitting classes) so he won’t be able to attend the shootout but he will make sure a big kettle of his championship beans will be on the range at Shank.
