For perhaps the last decade I have made my way to Lexington, Kentucky once a year to eat at Dudley’s On Short, a fine dining restaurant in the heart of the city. There, owner Debbie Long has consistently put out top-drawer, Kentucky-flavored cuisine since 1981.
Like this Hot Brown.
While it’s a shame that Ms. Long has not seen fit to use some of the mind-bendingly delicious bacon available from dozens of smokehouses littering the landscape of Kentucky, her chef’s version of the iconic dish is still one of the best in town.
