We smuggled a package of Conecuh sausage from Meridian, Mississippi into the 9th Ward of New Orleans a few weeks ago. Conecuh is one of the big regional producers out of Alabama and we wanted to see if it tasted as good as it did when we were kids coming of age in Birmingham.
We smoked it over Hickory wood in our 13 year old smoker for a couple hours, and spent a week eating on it. We made Mexican jambalaya and breakfast tacos primarily but there was an instance or two when we just ate a hunk of it with some sharp cheddar cheese.
Conecuh was founded in 1947 by Henry Sessions and has grown to be the dominant commercial sausage maker in Alabama.
