If you’re not making stock from scratch for your kitchen work you are now excused from the discussion.
At least once a week we fire up the smoker in the backyard and throw some pork neckbones or chicken backs on it for our ritual stock-making sessions.
Our stocks go in everything we cook from soups to stews to rice pilafs to mother sauces. We don’t put scratch stock in our breakfast tacos but that’s our only omission.
We are slaves to master stocks.
