Raymond Tatum, one of Austin’s top chefs since the 70s, is rolling out a menu he calls “chef’s favorites” for the 3rd anniversary of his 3 Little Pigs food truck.

We were there, lo those many years ago, on opening day and braved a 15 degree Yankee clipper as the good cook ushered in food truck fine dining in Austin, Texas.

Since then we’ve broken bread at the humble cart countless times. There is no finer way to spend an evening in Austin than parked on the patio overlooking the massive state cemetery with a big plate of hog meat, and a bottle of wine from East End Wines, by most estimates, the finest wine shop in Central Texas.

The menu for the party:

Fried House Cured Bacon w/Brussel Sprouts and Jasmine Rice

Slow Cooked Pork Tongue Nam Tok

Crispy Pan Fried Pig Intestine w/Fresh Rice Noodle, Leeks, and Bamboo Shoots

Twice Cooked Pig Cheeks w/Mushrooms, Bok Choy and Spicy Black Bean Sauce

If those specials don’t entice you then please visit the local mortuary as you are the walking dead.

Regular menu items will be available as well.
