In our ongoing efforts to round up the best cooks for our pop up restaurant series we turned to East Austin, home of Maria the tortilla lady. She’ll be in the kitchen at our Oaxaca Pop Up restaurant patting out masa sourced from Tijerina Tortilla Factory.

Tijerina’s is a molino, a grain mill where corn is toted in the back and converted into masa then sold to patrons

There are no molinos that we know of in Austin.

Careful sourcing is paramount to our goals and if it involves a trip to Seguin, Texas then so be it.

Come on out tomorrow night, Sat September 14th 2013 for handmade tortillas and big plates of Oaxacan cuisine at Tamale House East.
