We’re working overtime right now trying to get our heritage pork allotment lined out for our next pop up restaurant (number 8) To accomplish this we’ve been in contact with a multitude of hog farmers in Central Texas that are doing business the right way.

Cultivating ancient breeds and feeding them nothing but whole foods and rainwater. South Texas Heritage Pork raises the strain known as Large Black. There’s a website devoted to this remarkable breed here http://largeblackhogassociation.org/

The folks at the pork farm are having a competition on Sunday March 17th 2013 where teams will compete in 2 divisions: Culinary Students and an open class that’s for all comers.
