I sat down at lunchtime today with LeAnn Mueller, daugher of Texas barbecue icon Bobby {RIP} and sister of John Mueller, the pit boss ousted from JMueller BBQ earlier this week.

Ms. Mueller was busy, busy, busy as she prepares to re-open the barbecue business that has been shuttered for the past 48 hours. The name of the new venture is still up in the air but Mueller Barbecue and 78704 Barbecue are both being considered.

UPDATE-The name of the new venture is LA Barbecue.

Austin-Texas-the United States’-and the world’s barbecue community have all been in a state of turmoil since Wednesday’s earth shaking announcement that John Mueller would no longer be part of the food trailer that was the epicenter of central Texas barbecue. Much of our conversation was off the record amid legal allegations regarding John Mueller’s departure, so I steered the conversation to food.

Everything else is hot as a branding iron right now. We discussed the menu.

My first query was the status of the hot guts sausage. Young pit boss John Lewis {x-Franklin Barbecue} has stepped into the breech, bought a grinder extruder, and will be producing half-pound rings that will come under intense scrutiny on Saturday, November 3rd when the business begins operation.

Brisket. The barbecue meat that put John Mueller on the map will now be sourced via Niman Ranch, one of the better meat purveyors in the United States.

Pork Ribs. On the menu once more.

Beef ribs. Giant caveman-style beef chuck ribs will be for sale on Saturday.

Sides: Pinto beans, coleslaw and potato salad. I don’t eat sides other than crackers, pickles and onions so this does not matter to me. If you like non-meat then be aware that these non-meats will be available.

The last time Austin was so feverish for a barbecue opening was in October of last year when John Mueller prepared to step back into the world of Texas barbecue after a 5 year absence. After a year of record breaking crowds, the smoker went cold two days ago when he was relieved of his command.

Austin reacted predictably by going into a state of convulsions. The tremors spread across Texas, the United States and the world {I saw site traffic reading the article I posted on the fracas from Azerbaijan, South Africa, the UK and a host of other countries}

Once again the center of the barbecue universe will be the Bouldin Creek neighborhood tomorrow {Sat Nov 3 2012} at 11am when this new venture opens its doors.
