Texas food vs Southern Food.

What’s the difference?

Out here in the great state we’ve got chicken fried steak. Over in Alabama they’ve got country fried steak.

Out here in Texas we’ve got chile con queso. Over in Kentucky they’ve got beer cheese spread.

Out here in Texas we’ve got smoked pork ribs. Over in Mississippi they’ve got baked ribs simmered in barbecue sauce.

Out here in Texas we’ve got Texas Red Chili. Over in Dixie there are dozens of variations on the form with nobody ready to whup your ass if you throw a bean in the kettle. Texas ain’t the South. The South ain’t Texas. We love both and while the foodways may be similar they are also world’s apart. Sweet tea is scarce as hen’s teeth in Austin for example. If you order tea in Alabama, it’s brought sweet unless asked for otherwise. I recently spent an entire morning on the phone trying to round up a big bag of good, stone ground grits from one of Austin’s boutique grocery stores. They acted like I was crazy. “Stone ground what?” was the typical response. Grocery stores in South Carolina have Grits Sections with all manners of grits, stone ground and otherwise

We’re still dead set on celebrating Southern Food Heritage Day in spite of our being a 7-8 hour drive from The South. We’ll just do it in the kitchen. Five recipes from our Deep South recipe binder
