After reading Mick Vann’s portrait of the current commercial Texas sausage scene in the Chronicle recently I pored over the archives til I found a good photo of Gerard, one of the lynchpin meat men over at Texas Sausage Company.

We’ll be hitting the commissary kitchen later this week to knock out a batch of handmade sausage for the soul food pop up and we’ll be channeling the spirit of lifers in the industry like Gerard.
