It’s barbecue season year-round in the great state of Texas but national media deem late spring and early summer to be the time of year they roll out all their meat-y weapons in a never-ending pursuit of eyeballs and subscribers.

Who can blame them?

The death of print media has been well noted and if paper magazines can keep their lights turned on and reporters fed via smoked meat then more power to them. Food and Wine’s June issue just hit our inbox and Texas barbecue is featured prominently. John Mueller Barbecue, Franklin Barbecue, The Woodshed Smokehouse and Sugar & Smoke all get write-ups in the Texas section of the national barbecue primer.

We’re predicting John Mueller will open up in a brick and mortar sometime around the Fall of 2012. He’s doing land-office business down in Bouldin Creek and clearly needs to move his operation indoors before those frigid sub-60 degree evenings hit this November.

Our last couple visits to Fredericksburg found the once charming small town to be flat over-run by chiropractors on loud Harleys and blue haired ladies ready to stab the back of your wrist with a fork if you came between them and a fried chicken thigh at the local buffet. We’re probably not heading to Sugar & Smoke anytime soon.

Franklin continues to be a conundrum for our eating habits. Outside of hiring a hobo to stand in line for a couple hours we don’t see any chance of getting fed there anytime in the near future. Pity, as we really loved this spot when it was down the street in French Place.

When Tim Love’s not knee deep in a bottle of liquor, he’s by all accounts, quite a talented meat cook. However, we have a genetic aversion to traveling further north than Waco so we’ll have to rely on field reports on his Fort Worth restaurant.

Food and Wine provided an adequate overview of some of the highlights of a Texas barbecue tour. They mixed in the fancy with the down to earth spots and had a good geographical range for prospective meat tourists.

While improvements could have certainly been made, we thought this article provided a decent, cursory primer for people who know little of Texas barbecue traditions.
