The competition barbecue circuit is about to be under full blaze in the great state. Reflecting back on last years series we’re still struck by Jim Towers, the Happy Hillbilly, whom we met at the National Championship in Meridian, Texas.

We sat around drinking beer with Jim for an hour or so while he spun yarns and told tall tales. We swapped a few lies amongst ourselves.

It was a good time. Of course it’s a long, long run up to Meridian and we’ll have a lot of barbecue to eat between here and there. Any teams on the circuit reading this post?
