On a roadtrip down to the Rio Grande Valley this past summer we popped into a little roadside barbecue house in Three Rivers Texas. Not expecting much we grabbed a half pound of brisket for a pittance and motored back up on the highway.
Once we tore into the packaging we realized we’d made a mistake in ordering such a small amount. Van’s Barbecue in Three Rivers could open up in Lockhart and give Black’s a good run for their money. We asked for it black and fatty and that’s what we got. Sweetly charred steer meat with ribbons of luscious fat running throughout.
Frankly, we were blown away.
If you’re ever down that way, make sure you stop in and get a pound of Van’s brisket. It stacks up nicely with the finest we’ve had in Central Texas.
