We had ourselves a good visit with veteran pit boss Wayne Ging up in Williamson County earlier this year.

We’re always on the lookout for handmade Texas hot guts and Mr. Ging’s were something else. In addition to superb sausage, his pork ribs ended up being the best bite of barbecue we put in our mouth at the cook-off. The Texas barbecue cook off circuit is at a stand still presently but will get going again after the turn of the year. We’re raring to go.

In the mean time we’ll content ourselves with what we can pull off the smoker in the back yard as well as plenty visits to the Bouldin Creek neighborhood where the hot headed John Mueller is plying his trade.
