Over on Grub Street, the food blog of New York magazine they’re reporting that Aaron Franklin, pit boss of Franklin Barbecue in Austin, Texas is going to be serving up his barbecue at Hill Country Barbecue Market this weekend in New York City.

New Yorkers will be able to eat brisket like they’ve never had before, this Sunday Nov 13 2011 from 6-9 pm. Executive chef [pit boss?] Elizabeth Karmel better be shoring up her flanks or she’ll be looking for a job if any of the wheels at her joint decide to bring Aaron on at the New York outfit.

We’ve never eaten at Hill Country but it’s hard for us to imagine them currently putting out barbecue on the level of Franklin or John Mueller.

We can already see the screaming headline in New York Times come Monday morning after a late night Hill Country Barbecue investors meeting.

“KARMEL OUT AS HILL COUNTRY BRINGS IN YOUNG BUCK PIT BOSS FROM AUSTIN TEXAS!”

It would be a natural progression in Franklin’s career as he’s been all bright lights big city in the national media for over a year now.

Austin needs places like Franklin and Mueller’s joint to keep the other joints in town earnest as they’d really gotten complacent over the years.

It was as though they knew they weren’t as good as Lockhart/Taylor and they weren’t even going to try.

Now with two world class barbecues within 2-3 miles of each other and perhaps another on the way in north Austin the sky’s the limit for Austin’s smoked meat world.
