Hearts are heavy across Gonzales County, Texas tonight. Family Tradition served their final plates of brisket, hot guts sausage and pork ribs today.

Operating decidedly under the radar over near the railroad tracks down in Waelder, Texas, Family Tradition was quietly putting out Lockhart/Taylor quality smoked meat from a 100 year old converted service station. Pit boss Jerry Fogle, after 35 years on the smoker, is having knee surgery and taking some time off to recuperate before he wades back into the fray. In the Spring of 2012 look for the man to re-open Family Tradition over near Lake McQueeney where he has a lake house.

We’ve been driving to Waelder for years to eat at Dan Eureste’s [RIP] old joint but only recently discovered Fogle’s operation. All his output was first class but his hot guts were really something special.
