Texan Tim Hilbert has about had it with the bureaucrats in China.

It’s getting so a body can’t sell smoked beef and margaritas in downtown Beijing without the gendarmes coming along and spoiling the party.

At Tim’s Texas Bar-B-Q in the central business district the law’s been coming along now and then and trying to ride herd on Tim and his customers. Mr. Hilbert’s not having it.

The Seguin, Texas native’s attempt to serve patrons on the sidewalk in front of his restaurant has been met with resistance by code enforcement officers.

I think it might be time for a running lariat a la Stan Hansen to settle the matter once and for all.

He’s been running his successful barbecue restaurant since 2006 but not without a lot of hassle.

He reckons the police have been by his establishment 15 times in the last year.

We’ve often fantasized about opening up a brisket house in say, Istanbul or Budapest, so our hat’s off to Mr. Hilbert for his tough as rawhide business acumen.
