We first learned of the phenomenon of Pittsburg Hot Links from Lewisvillehounder over on the Texas Chowhound board.

One of our scouts was in Gilmer Texas last week and found a packet of them in a grocery store and ferried them back to Austin.

Where they found themselves on the smoker in the backyard yesterday afternoon.

With beef salivary glands, tongue and heart as some of the crucial ingredients we knew we had a major score on our hands.


These are for meat lovers only as they have a deep, “dark” flavor unlike anything I’ve ever tasted.

I immediately set out to make a soul food chili which I just finished up this morning.
