I’ve been fortunate enough to sample a few of the test runs of a cured meat start-up here in Austin called Flying Pig Provision Company.
The venture is slated for a Fall roll out of several different products including bacon, pancetta and corned beef.
The development team has been in beta mode with their meats for the last few months and some real appreciable gains in quality have been made.
Pictured is corned beef cooked at high heat with 1015’s, served on a bollilo with appropriate condiments. It’s delicious.
