A huge upset was almost pulled off by a Hungarian wooly pig from Washington state at the World Championship Barbecue Cooking Competition in Memphis a little over a week ago.

The USA had it’s dream team in basketball back in 1992 but they couldn’t hold a candle to the dream team that stormed out of nowhere to almost snatch a victory at Memphis’ historic barbecue showdown.

The Fatback Collective, the cooking team of Jim n Nick’s Bar-B-Q, a regional chain based out of Birmingham was competing in their first event but they had multiple weapons: Four James Beard award winners in Donald Link of Herbsaint, John Currence of City Grocery, Steven Stryjewski of Cochon, John T. Edge of journalistic fame as well as a supporting cast

And of course a wooly Mangalitsa hog from famed pig importer Heath Putnam’s farm out in Washington state.

In spite of all this firepower the team couldn’t wrench the blue ribbon from multiple barbecue circuit champs Yazoo’s Delta Q instead having to settle for a third place finish.

Team spokesman Putnam summarized the group’s feelings about the loss: “We were all like a bunch of pissed-off pigs.”
