I love Mr. Cole’s reaction the first time he sampled sushi: “I thought it was fucking disgusting. I hated it,” Honesty can be hard to come by from folks in the spotlight these days.

The narrative of Tyson Cole’s career has been well established elsewhere.
Suffice to say, in spite of Japanese master Takehiko Fuse’s efforts at Musashino [thought by many to still be the number one sushi house in town] it took a young white Floridian to put Austin on the national raw fish map.

With Uchi set to open a Houston location this year, business is good for the team of Paul Qui, Chef Cole and Philip Speer.

It has been nine long years since the great state brought home the James Beard award for best chef in the southwest [ Robert del Grande of Houston’s Cafe Annie ] so I reckon we were about due.

If they ever get a brisket category one Aaron Franklin stands as good a chance as anybody.

Saipin Chutima of Las Vegas’ Lotus of Siam finished in a tie with Chef Cole for the award.
