Old school, country meat markets in Texas are vanishing. Long Horn Meat in East Austin is one of the last of a dying breed and the last of it’s kind in Austin proper. I just ran by there and grabbed a couple family packs of chicken backs for a stock I’m making for our Txoko gastronomic society meeting this weekend.
Porrasalda is in the works, the typical kettle of Basque soul food. I’ll put up a recipe in the next few days.
