The afternoon sun is just catching this Pork Belly Sandwich with Green Apple, Fried Scallion and Maple Soy Reduction.

Pork Belly consumption has shot up in Austin over the last couple years with the popularity of Odd Duck, East Side King and now Three Little Pigs.

We ran through the menu last week and this was my friend, a fellow chef’s favorite item on the menu. I personally favored the Thai Green Curry Noodle with Roasted Pork Butt.
