When the dust settled last Fall and Johnsons Boucaniere had a first place finish in the boudin competition in Lafayette Louisiana it immediately became clear to me that a roadtrip was in order. I procured a brace of boudin and sausages for my freezer a couple days ago. More on Johnson’s later [I haven’t had a chance to sample any of my score.]

Update: In the land of Acadiana, there are dozens of boudin houses dotting the landscape. The weakest of the bunch could open up here in Austin and do land office business. The upper echelon joints like Johnson’s are simply some of the finest meat purveyors on earth.

If you’re ever anywhere near Lafayette, Louisiana hop off the freeway and drive the 5 minutes it takes to get to Johnson’s. It’s one of the finest in Cajun country.
