Up in Kentucky the good mountain folks eat lots of hominy but if you mention posole you’ll get a puzzled look and a “what in the Hell’s that?”

So the other night up at my moms’ house in Corbin, a railroad community in the Cumberland Highlands region, I loaded up her grill with tomatillas and poblanos in a snowstorm.

I’ve been meaning to put a posole recipe up for awhile and it’s coming.
