Up in Jackson County Kentucky there’s a tiny community called McKee. There aren’t a lot of restaurants in this village but there is one of particular note: Opal’s.
Oddly, country ham isn’t featured on a lot of menus in Kentucky so when you see it you get at it quick. Opal’s has a notably good version.
They serve it fried as a steak and they also serve it boiled and sitting in its’ own juices on a steam line.
Which is how it’s pictured here with a side of piping hot salty french fries.
And I would never drag those hot potatoes through the porky au jus that’s puddled up on the plate beneath the ham.
Cause that would be wrong.
