I just procured four good sized hogs heads brains, tongues and eyes extant.

While I’ve eaten barbacoa for the biggest part of my adult life I’ve never done it in the Hidalgo tradition. Yes, I’ve turned out respectable oven barbacoa a number of times and it’s good, but it’s time to dig a hole and go old school.
